Tamasan Oshimugi Pressed Barley 650g is Japanese pressed barley — barley grains steamed and rolled flat so they cook quickly and evenly. It is not a side dish in its own right: you mix it through washed white rice before cooking, and the rice comes out as mugi gohan (麦ごはん), with a nuttier flavour and a pleasant chew running through it. Tamasan makes this one from domestically grown Japanese barley, and the pack is made in Japan.
About Tamasan
Tamasan (玉三) is the consumer brand of Kawamitsu Bussan Co., Ltd. (川光物産株式会社), a Tokyo-based maker of Japanese pantry staples founded in 1887 — it began as a rice-collection and sake business under the thirteenth-generation head of the Kawai family, and has been refining barley since 1913. The company is best known in Japan for its shiratamako (glutinous rice flour), kinako and katakuriko, produced across four factories in the Kanto region.
What is oshimugi?
Oshimugi (押麦) is barley that has been steamed and pressed between rollers into flat grains — the same idea as rolled oats, applied to barley. Flattening shortens the cooking time and lets the grain soften in step with rice, which is why it is the standard form of barley in Japanese kitchens. It is a different product from mochi mugi (もち麦), a waxy barley variety with a rounder, bouncier bite.
How to use it — Tamasan's instruction
Tamasan's direction is simply to mix the barley in with white rice when you cook the rice. Follow the proportions and water adjustment printed on your pack.
