About Tamasan
Tamasan (玉三) is the consumer brand of Kawamitsu Bussan Co., Ltd. (川光物産株式会社), a Tokyo-based maker of Japanese pantry staples founded in 1887 that began as a rice-collection and sake business under the thirteenth-generation head of the Kawai family. It is best known in Japan for shiratamako (glutinous rice flour), kinako and katakuriko, produced across four factories in the Kanto region.
What is murasaki imo?
Murasaki imo (紫いも) is purple sweet potato — a sweet potato whose flesh is deep violet rather than pale yellow, the colour coming from anthocyanin pigments. In Japan it is treated as much as a colouring ingredient as a vegetable, turning up in wagashi, cakes, ice cream and Kyushu regional sweets, and it is grown particularly in the south, Kagoshima included.
How to use it — Tamasan's directions
Tamasan gives three methods on the pack. In milk: slake a slightly rounded tablespoon (about 5 g) in a little milk first, then make it up to 200 ml. In yogurt: about 5 g stirred through 100 g of yogurt. In baking: replace roughly 5% of the flour weight in bread, cookies or cakes. Tamasan also notes that egg white, baking powder and other alkaline ingredients will shift the colour, and that a little lemon juice counteracts it — the variation comes from the anthocyanin pigment itself and, in the maker's words, has no effect on the body. Reseal the bag after opening and keep it away from humidity.
