Takara Hon Mirin Junryo (タカラ本みりん「醇良」) 500 ml — a true Japanese hon mirin, brewed from glutinous rice and rice koji rather than blended as a substitute. Takara describes it as rich in more than nine kinds of sugars and more than eighteen amino acids, giving food a refined sweetness and glossy sheen (てりつや) along with deep koku and umami. Alcohol content 12.5–13.5%. Every stage of production — from the koji-making at the heart of hon mirin through brewing, maturing and filling — is carried out at Takara's own factories in Japan. 500 ml PET bottle.
About Takara Shuzo
Takara Shuzo Co., Ltd. (宝酒造株式会社) is a Kyoto brewer and seasoning maker, headquartered in Fushimi, Kyoto, and wholly owned by Takara Holdings Co., Ltd. Its hon mirin range runs to several separate lines, including Junryo (醇良), Junmai (純米) and Zeitaku Komekoji (贅沢米麹).
What "hon mirin" means
Hon mirin (本みりん, "true mirin") is brewed as a genuine alcoholic seasoning and carries roughly 14% alcohol. It is a different product from mirin-style seasoning (みりん風調味料), which contains less than 1% alcohol.
How to use & enjoy
Mirin is used as a finishing touch to give food a glossy sheen, which is what makes it central to teriyaki — a glaze built from soy sauce and mirin. In Japanese cooking it is often used together with soy sauce and sake.
