What is Tosa shoyu
"Tosa shoyu" is a style of dashi soy sauce named after Tosa (the old name for Kochi, the home of katsuobushi). Bonito — and often kombu and mirin — are added to a soy-sauce base to give a fuller, rounder, gently savoury flavour than plain soy sauce.
Popular uses
Per Shoda, use it for dipping or pouring over sashimi and chilled tofu (hiyayakko), and in simmered dishes (nimono) and hot pot (nabe).
