About Shinsyu-Ichi Miso
Shinsyu-Ichi Miso has been making miso in Nagano since 1916, when its Marutaka factory began brewing soy sauce and miso. The company registered the Shinsyu-Ichi miso trademark in 1938, traded as Miyasaka Brewing Co., Ltd. from 1933 until 2017, and took its present name that year. Its head office remains in Suwa City, Nagano.
What is miso, and what does "dashi-added" mean?
Miso (味噌) is a fermented soybean paste — soybeans cultured with koji and salt, then aged — and it is the backbone of Japanese home cooking. Ordinarily you would make dashi, Japan's basic stock, and dissolve the miso into it. A dashi-added miso (だし入り味噌) has that stock built into the paste at the factory, which is why this range is sold as a shortcut for everyday cooking.
How to use & enjoy
Miso soup is by far its most common use. Beyond soup, miso works as the base of marinades, glazes, sauces and dressings for fish, meat, tofu and vegetables, often alongside sake and mirin — miso-glazed grilled eggplant (nasu dengaku) is a classic example. In soup, miso is a natural partner for tofu and wakame seaweed, finished with sliced spring onion.
