About Shinshin
Shinshin Foods (株式会社新進) is a Tokyo-headquartered Japanese food manufacturer founded in 1894 and incorporated in 1940. It began making wheat gluten and starch, and today builds its business around vegetables — pickles above all, alongside seasonings, wheat starch and protein, and chilled potato products — from three factories in Japan with around 470 staff.
What is menma?
Menma (メンマ) is bamboo shoot that has been lactic-fermented and then seasoned, giving it a firm, fibrous bite quite unlike fresh bamboo. It is one of the standard toppings on a bowl of ramen, where its crunch and savoury edge cut against the richness of the broth.
How to use & enjoy
