Shinshin Karami Hato Kyuri (Chilli Pickled Cucumber) 90g is a Japanese cucumber pickle with a chilli edge — Shinshin's own line for it is "cucumber pickles furnished with spicy green chili pepper". Cucumber is pickled in a soy-sauce base with green pepper and hatougarashi, the chilli leaf that gives the pickle its name and its aroma, and rounded out with sugar and brewed vinegar. It is made in Japan by Shinshin, and the maker states it contains no animal-derived ingredients.

What is tsukemono?
Tsukemono (漬物) are Japanese pickles, and they are a fixture of the everyday Japanese table rather than a condiment on the side. Vegetables are cured in salt, soy sauce, rice bran, vinegar or sake lees, which keeps them and concentrates their flavour, and a small dish of them is served with almost any rice-based meal.
How to use & enjoy
Serve a small dish of it alongside plain steamed rice — that is how tsukemono are eaten in Japan, as a salty, crunchy counterpoint rather than as a main event. They also do the work of a palate cleanser across the course of a meal.
