About Shimaya
Shimaya Co., Ltd. (株式会社シマヤ) is a seasoning maker based in Shunan, Yamaguchi, founded in 1890 as a miso brewer. It has made Shimaya Dashi no Moto since 1964, and also makes dashi packs, miso, seasonings and zosui rice porridge.
What is awase dashi?
Awase dashi is dashi made from a combination of kombu and bonito flakes. The inosinic acid in the bonito and the glutamic acid in the kombu work together, deepening the umami of the stock.
How to use & enjoy
Dashi is the fundamental soup stock of Japanese cooking, and granules are an instant form of it. Dashi is the base for miso soup, noodle broths and many simmered dishes.
