What is Echigo Taruyaki
Katayaki senbei (堅焼せんべい) is the hard-baked style of Japanese rice cracker — dense and firm rather than light and airy. By one of several accounts Sanko Seika tells, the Echigo Taruyaki name comes from "Niigata Jinku", a bon-odori folk song carried down for over 200 years in Niigata City, which is accompanied by taru-kinuta — percussion played on wooden barrels. The range comes in three flavours: shoyu (soy sauce), umami shio (salt) and goma (sesame).
How to make Echigo Taruyaki Okoshi — Sanko Seika's recipe
Ingredients: 10 Echigo Taruyaki Goma crackers (about 50 g), 3 tablespoons sugar, 2 teaspoons starch syrup (mizuame), 2 teaspoons water, ½ teaspoon sesame oil.
Method: Crush the crackers and set aside, and ready two sheets of baking paper. Put the sugar, starch syrup and water in a heatproof bowl and microwave (500 W, 90 seconds). Taking care not to burn yourself, remove, stir in the sesame oil, and microwave again (500 W, 60 seconds). Again taking care, remove and mix in the crushed crackers. Turn out onto one sheet of baking paper and press flat with the second sheet on top. It sets hard, so mind your hands — cut into bite-sized pieces with a knife.
