S&B Yuzu Kosho (柚子こしょう) Spicy Citrus Paste 80g is a fragrant citrus-and-chilli paste made with 100% Japanese-grown yuzu and green chilli. S&B increased the proportion of yuzu in the blend so the fruit's own character comes through more clearly, and the result is aromatic and sharply hot rather than simply fiery. It is a finishing condiment used by the dab, not a sauce, and this is the wide-mouthed 80 g jar.
About S&B Foods
S&B Foods Inc. (エスビー食品株式会社) manufactured Japan's first curry powder in 1923 — a claim the company still prints on its own packs — and built its spice and seasoning business from there. What is yuzu kosho?
Yuzu kosho is a paste of ground yuzu citrus and fresh chilli with salt added. The name puzzles people because it contains no pepper at all — S&B explains that in Kyushu, where the condiment comes from, chilli has long been called kosho, the usual Japanese word for pepper. The flavour is the chilli's heat carried on yuzu's fresh citrus aroma.
How to use & enjoy
S&B suggests it for hot pot dishes, gyoza, yakitori, pasta and steak. It is potent, so it is used sparingly — a small dab on the plate or stirred into a dipping sauce rather than spooned on.
