S&B Ichimi Togarashi (一味唐からし) 15g is pure ground red chilli — one ingredient and nothing else — in a small glass table shaker. S&B describes it as coarsely ground dried chilli peppers, with fine ground flakes of select chilli bringing out sharp spiciness and good aroma and adding colour to the dish. Made in Japan.
About S&B Foods
S&B Foods (エスビー食品株式会社) was founded 1923 by Minejiro Yamazaki in Asakusa, Tokyo. Yamazaki produced Japan's first commercial domestic curry powder — the "Hidori" brand — and the "S&B" mark (combining "Sun" and "Bird") was added to the trademark in 1931. The flagship Red Can Curry Powder launched 1950, the Golden Curry (ゴールデンカレー) roux range followed, and in 1970 S&B pioneered the tube format for wasabi, karashi, and ginger condiments — now a Japanese kitchen staple.
Ichimi or shichimi?
Ichimi togarashi (一味唐辛子) means "one-flavour chilli": ground red chilli and nothing more, so it makes a dish hotter without changing its other flavours. Shichimi togarashi (七味唐辛子) is the "seven-flavour" blend — chilli plus sesame, citrus peel, seaweed and other aromatics — which adds fragrance as well as heat. Reach for ichimi when you want a dish spicier but otherwise unchanged.
How to use & enjoy
S&B suggests using it as a relish for noodles such as udon and soba, on beef, chicken, pork and fish dishes in place of pepper or mustard, and as a topping for sushi rolls.
