About S&B Foods
S&B Foods Inc. (エスビー食品株式会社) traces to 1923, when its founder Yamazaki Minejiro succeeded in producing Japan's first wholly domestic curry powder. After the war the company brought that blend to market as its red-can curry powder, and S&B still names it as the spice base at the heart of its curry range. The red tin has been a fixture of Japanese home and restaurant kitchens ever since.
What is Japanese curry powder?
Japanese curry powder is a roasted, aged blend of spices — turmeric, coriander, cumin and chilli among many others — rather than a single spice or a finished sauce. It is not the same thing as a curry roux block, which adds flour and fat to make a thick sauce. The powder is used where curry flavour is wanted without the thickness: in stir-fries, in fried rice, folded through mayonnaise or potato salad, and as the seasoning base for a curry built from scratch.
