About Nisshin Seifun Welna
Nisshin Seifun Welna (日清製粉ウェルナ) is the consumer-foods arm of the Nisshin Seifun Group, Japan's largest flour-milling company (founded 1900). Its home-baking range includes Camellia (カメリヤ) bread flour, Violet (バイオレット) cake flour, Ma-Ma (マ・マー) pasta, and Aodo (青の洞窟) pasta sauces. What is cake flour
Cake flour (薄力粉 / hakurikiko) is low-protein wheat flour that develops little gluten, giving light, tender, fine-crumbed results — the standard choice for cakes, sweets and tempura batter, as opposed to high-protein strong flour (強力粉) used for bread. Violet is a premium grade of it.
