About Mizkan
Mizkan (ミツカン) was founded in 1804 in Handa, Aichi Prefecture, where it is still headquartered, beginning as a vinegar brewer that used sake lees (sake-kasu) to make affordable rice vinegar — an innovation that helped popularise Edo-era nigiri sushi. Today Mizkan's range spans Ajipon (味ぽん) citrus ponzu, Honteri mirin-style seasoning, Oigatsuo and Konbu tsuyu noodle soup bases, rice and sushi vinegars, and Kinnotsubu natto.
What is ryorishu (cooking sake)?
Ryorishu (料理酒) is Japanese cooking sake — a seasoning alcohol used in cooking rather than a drink. Unlike drinking sake, the everyday "kaen" (salt-added) style is lightly salted so it is sold as a seasoning; the alcohol cooks off, and its role is to tenderise, deodorise fish and meat, and round out dishes with rice-derived umami.

Commonly used in nikujaga, simmered fish and vegetables (nimono), teriyaki, sukiyaki, nabe hot pots, and as a marinade for chicken karaage and grilled fish.
