What is joshinko

Joshinko (上新粉) is rice flour made from non-glutinous (uruchi) rice — distinct from shiratamako and mochiko, which are made from glutinous (mochi) rice. It gives dango and wagashi a firm, springy bite. Mitake recommends it for kushi-dango (skewered dumplings), otsukimi-dango (moon-viewing dumplings) and kashiwa-mochi, and it can also be used for tempura batter and Western confectionery such as cookies.
