About Marutai
Marutai (株式会社マルタイ) is a Fukuoka noodle maker that created Japan's first instant stick-shaped Chinese noodle in 1959 and has been the pioneer of the "bo ramen" (棒ラーメン / stick ramen) format ever since — non-fried noodles in a long cellophane wrap. Its Regional Series (ご当地シリーズ) recreates famous ramen styles from across Japan.
The Yokohama Iekei style
Iekei (家系) is a Yokohama ramen style that fuses the richness of tonkotsu (pork-bone) broth with a soy-sauce (shoyu) base and a layer of chicken oil (鶏油, chī-yu), traditionally served over thick, flat noodles. Marutai's version uses plenty of pork-bone extract rounded out with soy sauce and chicken extract for the umami-heavy profile Yokohama's Iekei shops are known for, and comes with a chicken-oil seasoning sachet.
