Marushin Echigo Mochi (越後餅) 400 g — kirimochi rice cakes pounded in the traditional kine-tsuki (杵つき) mortar-and-pestle style, made with 100% paddy-grown mochigome from Niigata Prefecture. Marushin's own description reads: "kine-tsuki mochi made with 100% Niigata-Prefecture paddy mochi rice, nurtured by abundant water." The slabs are pre-scored with cut lines so they break cleanly, and come individually wrapped in a single-pack format. Refrigerate after opening. 400 g.
About Marushin Shokuhin
Marushin Shokuhin Co., Ltd. (マルシン食品株式会社) is a Niigata-based maker of mochi and desserts. It began in 1922 as a wagashi (Japanese confectionery) shop in Niigata City and was incorporated in 1952; its range covers kirimochi and mochi gift lines alongside packaged desserts.
What kirimochi is
Kirimochi (切り餅) is mochi that has been pounded, set firm and cut into flat slabs, then packed to keep. Unlike the soft filled mochi sold as a sweet, it is a hard, plain rice cake that is cooked before eating.
How to use & enjoy
Kirimochi is grilled or toasted before eating, which softens it and makes it puff up. Two savoury ways to eat it are zoni — a soup of mochi with vegetables, eaten at New Year — and isobe mochi, grilled mochi dipped in soy sauce and wrapped in nori seaweed. It is also eaten as a simple sweet, dusted with kinako soybean flour.
