Maruchan Frozen Kama-age Udon is a 1.25 kg bag holding five individually portioned 250 g servings of thick Japanese wheat noodle. The noodles are boiled at the factory and then flash-frozen — Maruchan's own line on the pack is that the rapid freezing is what stops the "living deliciousness" of freshly kettle-lifted udon from escaping — so what comes out of the bag is a cooked noodle that only needs warming through, not a dried one that has to be cooked from raw. The pack describes the result as strong in koshi, the springy resistance a good udon pushes back with, and smooth on the throat. Each bag is marked 日本製, made in Japan.

What kama-age udon means
Kama-age (釜あげ) describes udon served straight from the kettle it was boiled in, undrained and unrinsed, rather than chilled in cold water first. It is the way udon is eaten at its softest and most fragrant, and the name is used on frozen noodles to signal that the strand was packed at that moment rather than cooled and firmed up afterwards.
What frozen boiled noodles are
Frozen boiled noodles (冷凍ゆで麺) are cooked to the right texture in the factory and then frozen fast enough that the ice crystals stay small, so the strand does not turn soft or waterlogged. They reheat in a fraction of the time a dried noodle needs, and the texture they come back to is closer to a fresh noodle than a dried one will reach — which is why frozen noodles are standard behind the counter in Japanese noodle shops. Keep them frozen until they go in the pot, and do not refreeze once thawed.
How to use & enjoy
- Hot udon is classically served in a dashi broth seasoned with light soy sauce.
