Kyokuyo Sanma Kabayaki 100g is Pacific saury cooked and glazed in the sweet soy style of eel kabayaki, then sealed in a flat easy-open can. Kyokuyo's own line for it is 'the savoury grilled aroma stimulates the appetite', and that is the character of the glaze — soy and molasses-sweet rather than sharply salty. The can holds 100 g with 80 g of fish once the sauce is drained, and it is ready to eat as it comes. The saury is sourced from Japan and Taiwan, with final processing in Iwate Prefecture, Japan.

What is kabayaki?
Kabayaki (蒲焼) is a Japanese preparation in which fish is split, cooked over heat and finished with a thick, sweet soy-based glaze — the method traditionally associated with freshwater eel, unagi. Sanma (さんま) is Pacific saury, a slender, oil-rich blue-backed fish, and its richness stands up well to the same treatment.
How to use & enjoy
Kabayaki-glazed fish is most at home over a bowl of steamed rice, with the sauce from the can spooned over the rice — the same arrangement as the classic eel donburi. Savoury flaked fish is also a standard topping for ochazuke, the Japanese rice bowl finished by pouring hot green tea or dashi over the top.
