About Kuriyama Beika (Befco)
Kuriyama Beika Co., Ltd. (株式会社栗山米菓), which trades as Befco, is a rice-cracker maker established on 5 February 1949 and still headquartered in Niigata City, in Japan's main rice-growing prefecture. Alongside Agemochi Biyori it makes the Bakauke (ばかうけ) senbei line and the Nagisa Arare (渚あられ) range.
What is age-mochi?
Age-mochi (揚げもち) are rice crackers made by frying glutinous mochi rice rather than baking it. Frying gives a lighter, airier and more brittle bite than a baked senbei, and a richer mouthfeel that carries a glaze well — which is why the style is usually finished with soy sauce or salt.
