What "koikuchi" means
Japanese sesame oil is graded by how deeply the seeds are roasted before pressing. Koikuchi (こいくち) sits at the dark end of that range — a powerfully fragrant amber oil valued for its aroma. At the opposite end is taihaku, pressed from raw unroasted seeds and almost colourless and scentless, with lightly roasted oils in between.
