Kinjo Seika Co., Ltd. (金城製菓株式会社) is a confectioner based in Toyohashi, Aichi, founded in November 1946. Yokan is one of its core lines alongside jelly, baumkuchen, Western-style confectionery and gift confectionery, and the company holds ISO 9001 and ISO 22000 certification.
What is ogura youkan?
Yokan (ようかん) is a firm-set Japanese jelly made from sweetened bean paste set with agar. It is far denser and less wobbly than a Western jelly — closer to a confectionery block than a dessert — and is sold as a slab or a bar. Ogura (小倉) is the whole-bean style: azuki beans are left whole through the paste rather than worked smooth, so the bar carries pieces of bean rather than a uniform texture. It is the counterpart to neri youkan, which is kneaded until smooth.
