It is brewed from 100% whole soybeans, aged in two stages (二段熟成), and then finished without the heat treatment (火入れ) that ordinary soy sauce goes through — which is what leaves it a vivid, clear colour instead of a dark one. Kikkoman brews it to its chou-tokusen (超特選) grade, the top of its own quality scale, and describes the result as a rich umami with a soft saltiness: enough depth to stand up to fatty tuna, gentle enough that it lifts a delicate white fish rather than burying it. The bottle is a double-walled sealed container that keeps the soy sauce off the air, so it is stored at room temperature after opening rather than in the fridge. What "nama" soy sauce means
Nama shoyu (生しょうゆ) is soy sauce that has not been pasteurised. Almost all commercial soy sauce is heated at the end of brewing, which deepens its colour and pushes the aroma towards the familiar roasted note. Leave that step out and you get a lighter colour, a softer edge and a fresher smell — which is why raw soy sauce is the style Japanese cooks reach for at the table rather than in the pan. A dedicated sashimi soy sauce is a long-standing category in Japan for the same reason: what suits a simmered dish is not what suits raw fish.
