Kikkoman Reduced-Salt Nama Soy Sauce (Whole Soybean) 200ml is a raw soy sauce — brewed from 100% whole soybeans and then finished without the heat treatment (火入れ) that ordinary soy sauce goes through. Skipping it leaves the sauce a brighter, clearer colour with a gentler aroma, so it seasons without dominating. It also carries 25% less salt than Kikkoman's standard koikuchi soy sauce, which the maker gives as 17.5% salt. The bottle is Kikkoman's yawaraka mippei botoru (やわらか密封ボトル): a soft double-walled container that keeps the soy sauce off the air, so it is stored at room temperature after opening rather than in the fridge. What "nama" soy sauce means
Nama shoyu (生しょうゆ) is soy sauce that has not been pasteurised. Almost all commercial soy sauce is heated at the end of brewing, which deepens its colour and pushes the aroma towards the familiar roasted note. Leave that step out and you get a lighter colour, a softer edge and a fresher, sweeter smell. "Marudaizu" (丸大豆) is the other term on this label: it means the sauce is brewed from whole soybeans rather than the defatted soybean meal used in most everyday shoyu.
