Yuzu kosho (柚子こしょう) is the fragrant, salty chilli-and-citrus paste of Kyushu, and this is Kenko's non-oil dressing built around it. Yuzu kosho and yuzu peel carry the aroma and a subtle bitterness; grated daikon gives the pour some body in place of the oil a conventional dressing would use; and the base underneath is brewed vinegar and soy sauce rather than an emulsion. Kenko states the yuzu kosho is domestically grown, and describes the flavour as refreshing with a faint bitterness. The maker recommends it for meat and fish dishes as well as salad. 1 L.

What is a non-oil dressing
Non-oil (ノンオイル) dressings are a standard category on the Japanese table rather than a diet sub-range — thin, clear, vinegar-forward pours that season a salad instead of coating it. Because there is no oil to carry the flavour, they lean on vinegar, soy sauce and aromatics, and they behave differently from a vinaigrette — soaking into leaves rather than clinging to them.
