Kenko Mayonnaise (ケンコーマヨネーズ株式会社) was founded in Kobe in 1958 and is now headquartered in Tokyo. Alongside its mayonnaise, dressing and sauce ranges it makes prepared salads and side dishes, and processed egg products.
What makes Japanese mayonnaise different
Japanese mayonnaise is built on rice or grain vinegar rather than distilled vinegar, is seasoned rather than simply sharp, and is traditionally sold in a soft squeeze pack instead of a jar. The result is thicker, glossier and more savoury than the mayonnaise most Australian shoppers grew up with — which is why it is used as a finishing sauce in its own right, not only as a sandwich spread. Where a mayonnaise is made with egg yolk alone, as this one is, the body is fuller still.
