Kanpy The Premium Tsubu no Kiwami (粒の極み) is a 210 g easy-open can of sweetened azuki from the top of Kanpy's range, and its whole argument is what is not in it. Three ingredients: azuki beans grown in Tokachi, Hokkaido — Japan's benchmark region for them — sugar, and Okhotsk salt. Nothing else. Kato Sangyo simmers the beans plump so they hold their shape, which is what the name means: 粒 is the whole bean, 極み is the utmost of it. Once opened, transfer what you don't use to a glass or ceramic container and keep it refrigerated below 10°C.

What's anko
Anko (あんこ) is the sweetened azuki bean preparation at the centre of Japanese confectionery — the filling in daifuku, dorayaki and taiyaki, and the body of a bowl of zenzai. It runs from smooth strained pastes to preparations that keep the beans whole and spoonable, and Japanese cooks choose between them by texture.
How to use & enjoy
Sweetened azuki is a component used to make sweets rather than a dish eaten on its own, and it is used hot or cold. One standard destination is zenzai, also called oshiruko — a warm sweet azuki soup served with toasted mochi, eaten through winter and especially around New Year.
