Kanpy Shiroan (しろあん) is a 300 g pouch of sweet white bean paste — the pale, mild counterpart to red bean anko, made in Japan by Kato Sangyo from white kidney beans and sugar. Kato Sangyo describes it as finished for richness of flavour so that it suits a wide range of Japanese confections, and names strawberry daifuku and flavoured fillings as what it is for. Because it takes colour and flavour readily, it is the base used when an anko needs to be something other than red — the maker names 変わり餡, flavoured and variant fillings, among its uses. Once opened, transfer it to an airtight container and keep it refrigerated below 10°C.
About Kanpy
Kanpy (カンピー) is the consumer food brand of Kato Sangyo Co., Ltd. (加藤産業), a Nishinomiya-based general food wholesaler founded in 1947. The Kanpy range spans eighteen categories of everyday pantry goods, from jams, spreads and canned fruit to bean pastes, nori, dried goods, flours and noodles.
What's shiroan
Shiroan (白あん / しろあん) is sweet white bean paste — the same family as the red-bean anko most people meet first, but made from white beans instead of adzuki. It is milder and less bean-forward, and its pale colour is the reason it exists: it can be tinted and flavoured, which red anko cannot.
How to use & enjoy
Shiroan is a filling rather than a finished sweet. It is the traditional filling for daifuku — mochi wrapped around bean paste — and for manju, the steamed bun-style pastries. Kneaded together with gyuhi, a soft mochi dough, it becomes nerikiri: the hand-shaped, seasonally themed confection served with tea.
Ingredients
Prepared common bean (white kidney bean), sugar, sweetener (420 — sorbitol).
