Iwatsuka Confectionery Co., Ltd. (岩塚製菓) is a Niigata rice-cracker maker founded in 1947 as an agricultural processing plant in Iwatsuka Village — now part of Nagaoka City — and renamed to its present name in 1960.
What "senbei" and "shirasu" are
Senbei (せんべい) are rice crackers baked from ordinary uruchi rice, giving a firmer, crisper snap than the mochi-rice okaki. Shirasu (しらす) are tiny young whitebait — an everyday Japanese ingredient eaten whole, most often over rice, and here worked into the cracker dough for a savoury, faintly briny depth.
