Iwatsuka Confectionery Co., Ltd. (岩塚製菓) is a Niigata rice-cracker maker founded in 1947 as an agricultural processing plant in Iwatsuka Village — now part of Nagaoka City — and renamed to its present name in 1960.
What "okaki" is
Okaki (おかき) are rice crackers made from glutinous mochi rice, which gives them a lighter, softer, puffier bite than senbei — the flat, hard-baked crackers made from ordinary uruchi rice. "Mame mochi" (豆もち) is the bean version, with whole soybeans worked through the dough.
