What is hojicha?
Hojicha (ほうじ茶) is Japanese green tea that has been roasted rather than only steamed. The roast changes the character completely: the colour turns reddish-brown, a toasty aroma develops, and the sharper, more astringent notes of an unroasted green tea soften considerably.
