What is dengaku miso
Dengaku (田楽) is a classic Japanese preparation in which a sweetened miso glaze is spread over an ingredient — often eggplant, taro, tofu, konnyaku or daikon — and lightly grilled or broiled so the miso caramelises. Dengaku miso is the ready-made glaze for it.
Popular uses
Per Ichibiki, spread it over seasonal ingredients such as nasu (eggplant) dengaku and satoimo (taro) dengaku. It also suits tofu dengaku, konnyaku dengaku and grilled daikon.
