Ginza Kagari Creamy Chicken Paitan Ramen Set brings home the bowl that almost every customer at the Ginza flagship orders first. The soup is a chicken paitan so thick and creamy — built with fresh cream — that some people describe eating it as being like eating carbonara. To make it work at home the recipe was developed under the restaurant owner's supervision (店主監修) and released as a matched noodle-and-soup set: an original soup combining slow-simmered chicken paitan stock with several chicken extracts and chicken oils, aiming at the restaurant's balance of poultry umami, body and creaminess. The whole set is shelf-stable at room temperature, which is why it is sold in Japan as a souvenir.
About Ginza Kagari
Ginza Kagari (銀座 篝) is a ramen restaurant with its flagship in Ginza, Tokyo, known for a chicken paitan broth often compared to a French potage and for the queues outside its door; it was selected as a Michelin Guide Bib Gourmand in both 2016 and 2017. Its dining room is finished in hinoki cypress with the calm feel of a traditional Japanese restaurant, and the shop has since expanded to further locations in Japan and overseas. This take-home set is produced under licence by Nippon Pure Food, Inc. (日本ピュアフード株式会社), a Tokyo-based Nippon Ham Group manufacturer specialising in meat- and extract-based products.
What is chicken paitan — and why "Soba"?
Paitan (白湯) means "white soup": a broth simmered long and hard enough that fat and collagen emulsify into the liquid, turning it opaque, creamy and full-bodied rather than clear. Tori paitan (鶏白湯) is the chicken version, sitting at the rich end of the ramen spectrum. The Japanese product name calls the dish "Soba", but that follows the old Japanese habit of calling ramen chuka soba — the noodles here are wheat noodles made with kansui, not buckwheat soba.
How to use & enjoy
A chicken-paitan bowl is traditionally finished with sliced chashu pork, a soft marinated ajitama egg, sliced spring onion and a sheet of nori.
