About Fundokin Shoyu
Fundokin Shoyu Co., Ltd. (フンドーキン醤油) is a soy-sauce and miso maker based in Usuki, Oita Prefecture, on the island of Kyushu. Its Amakute Oishii range is one of the company's signature sweet-shoyu lines.
What Kyushu sweet soy sauce is
Sweet (amakuchi, 甘口) soy sauce is the regional style of Kyushu and parts of southern Japan: soy sauce blended with sweeteners — here with dashi as well — for a thicker body and a distinctly sweet finish, in contrast to the sharper, saltier koikuchi soy sauce sold as standard elsewhere.
How to use & enjoy
This is not a speciality sauce reserved for one dish. In Kyushu, sweet soy sauce is the everyday soy sauce — it is the region's mainstream choice and is used where a cook elsewhere in Japan would reach for ordinary dark soy sauce, at the table and in cooking alike. If you already cook with soy sauce, use this the same way and expect a rounder, sweeter result.
