Fujicco's Shio Konbu (塩こんぶ) is salted kelp — fine strips of kombu slow-seasoned with soy sauce until they turn tender and glossy, then packed as the small 28 g pouch of Fujicco's long-selling ふじっ子 line. The kelp is 100% Japanese, and Fujicco finishes it plump and tender using its own process. A pinch adds a concentrated wave of savoury-salty umami to anything it touches.
About Fujicco
Fujicco (フジッコ株式会社) is a Kobe food manufacturer founded in 1960. It is one of Japan's best-known kelp specialists — its ふじっ子煮 tsukudani and ふじっ子 salted kelp sit alongside the おまめさん simmered-bean range and Caspian Sea Yogurt.
What is shio konbu
Shio konbu ("salted kelp") is a Japanese store-cupboard seasoning: kombu seaweed simmered in soy sauce, then dried and cut into slivers. It is intensely savoury rather than fishy, and it is used as a seasoning in its own right — a small amount does the work of salt plus dashi at once.
How to use & enjoy
Shio konbu is ready to eat and needs no cooking. Scatter it straight over hot steamed rice, or mix it through rice for onigiri. Fujicco also suggests it as a seasoning for dressed vegetable dishes (aemono) and vegetable stir-fries, and it is popular tossed through hot pasta.
