Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. What is ponzu — and what is yuzu?
Ponzu (ぽんず) is one of the Japanese kitchen's essential sauces: soy sauce cut with citrus juice and vinegar, giving something far lighter and sharper than soy sauce on its own — savoury, tart and aromatic all at once. It is used as a dipping sauce and a dressing rather than a cooking sauce. Yuzu (柚子) is a Japanese citrus about the size of a mandarin, prized for its rind and its sharp, floral perfume rather than for eating whole; a yuzu ponzu is the most fragrant version of the sauce.
How to use & enjoy
Ponzu is a standard dipping sauce for hot pot at the table, shabu-shabu included, and just as at home in a small dish beside gyoza or spooned over sashimi. It also works as a light Japanese salad dressing, and over grilled meat, where the citrus cuts through the richness.
