Daisho Yakiniku Sauce (Yuzu) 185g is the citrus bottle in Daisho's yakiniku range — 柚子香る焼肉のたれ, literally "yuzu-scented yakiniku sauce". The pack states it is made with Japanese-grown yuzu juice, and the maker describes it as a yuzu-flavoured barbecue sauce with the rich taste of garlic and miso. The yuzu is what makes it different from a standard tare: the same savoury backbone, lifted and cut by a sharp, fragrant citrus rather than weighed down with sweetness.
About Daisho
Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. It now works from dual headquarters in Tokyo and Fukuoka, and is known across Japan for yakiniku and steak sauces, seasoned salt-and-pepper, and nabe hot-pot soup bases, under the company motto "creating happiness through deliciousness".
What is yakiniku no tare — and what is yuzu?
Yakiniku (焼肉) is Japanese-style barbecue, where thin slices of beef, pork and vegetables are grilled a few pieces at a time. The tare (たれ) is the sauce that goes with it — poured into a small bowl so each person dips the food as it comes off the grill, rather than brushed on during cooking the way a Western barbecue sauce is. Yuzu (柚子) is a Japanese citrus about the size of a mandarin, prized for its rind and its sharp, floral aroma rather than for eating whole; it is what gives this bottle its perfume.
How to use & enjoy
Pour it into a small dish and dip the meat and vegetables in as they come off the grill — that is how a tare is used at a Japanese barbecue table. It is not only for the grill, either: the maker suggests it for meat, stir-fried rice and other dishes, and a tare like this is commonly used to season stir-fries and to finish rice bowls.
