What is yakiniku no tare — and what is wasabi?
Yakiniku (焼肉) is Japanese-style barbecue, where thin slices of beef, pork and vegetables are grilled a few pieces at a time. The tare (たれ) is the sauce that goes with it — poured into a small bowl so each person dips the food as it comes off the grill, rather than brushed on during cooking the way a Western barbecue sauce is. Wasabi (わさび) is a Japanese plant whose grated rhizome gives a sharp, fleeting pungency that rises through the nose rather than burning on the tongue the way chilli does — which is why it works against rich grilled meat.
How to use & enjoy
Pour it into a small dish and dip the meat and vegetables in as they come off the grill — that is how a tare is used at a Japanese barbecue table. It is not only for the grill, either: the maker suggests it for meat, stir-fried rice and other dishes.
