Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. What is kabayaki?
Kabayaki (蒲焼) is the Japanese method of butterflying an eel, skewering it and grilling it while brushing on a sweet soy glaze in layers, so the surface builds up a lacquered sheen. The glaze itself is called the tare. Served over rice it becomes unadon or unaju — one of Japan's most prized summer dishes — and the same sauce is what gives supermarket kabayaki eel its familiar flavour.
How to use it — Daisho's directions
Daisho's instruction is simply to pour a suitable amount over grilled eel kabayaki and serve, and notes that one bottle covers roughly eight eel fillets. Beyond eel, the maker suggests it for teriyaki and for simmered fish — a recommendation printed on the bottle itself as well as on the product page.
