About Daisho
Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. It now works from dual headquarters in Tokyo and Fukuoka, and is known across Japan for yakiniku and steak sauces, seasoned salt-and-pepper, and nabe hot-pot soup bases, under the company motto "creating happiness through deliciousness".
What is teriyaki?
Teriyaki (照り焼き) names a cooking method rather than a flavour: teri means the shine a sauce leaves behind, and yaki means grilled or pan-cooked. A soy-based sweet-savoury sauce is applied as the food cooks and reduces onto the surface, so the finish is lacquered rather than saucy — the gloss is the point, and it is what separates teriyaki from simply cooking something in soy sauce.
How to use & enjoy
It works two ways: used straight from the bottle as a marinade for meat, chicken, fish, seafood or tofu before cooking, or brushed on late in the grilling so it finishes as a browned, glossy glaze. It is also stirred through stir-fries. Chicken teriyaki and teriyaki salmon are two of the standard dishes it makes.
