About Daisho
Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. What is tebakara?
Tebakara (手羽唐) is a compound of teba (手羽), a chicken wing, and kara (唐), from karaage — Japanese-style deep-frying. So the name is literally "fried wings": the wing is seasoned, dusted with flour, fried, then coated in a sweet-savoury tare while it is still hot. It is a different job from a grilling sauce — the sauce goes on after the cooking, not before it.
How to use & enjoy
Daisho's own method: season the wings with salt and pepper, dust them lightly with flour, deep-fry them, then coat them all over with the sauce — the maker's guide is about 20% sauce by weight to the meat — and finish with pepper and toasted sesame to taste. This is the style of wing Nagoya is known for: fried, then glazed in sweet-savoury soy rather than marinated beforehand. They are a classic izakaya plate, and they go with a cold beer.
