Daisho Co., Ltd. What is goma-ae?
Goma-ae (ごま和え) is one of the staples of the Japanese home table — vegetables blanched briefly, squeezed dry, then tossed in a sweet-savoury ground-sesame dressing and served cool as a small side dish. It belongs to the aemono (和え物) family, meaning anything "dressed" rather than cooked in a sauce, and it is the dish most Japanese households reach for when a meal needs a vegetable alongside the rice.
How to use & enjoy
Daisho's own recipe serves three to four and uses one sachet to a bunch of spinach (about 250 g). Boil the spinach for roughly a minute in salted water, cool it in cold water, then squeeze it out well and cut it into 4 cm lengths. Squeeze once more — getting the water out is what stops the dressing going thin — then add the sachet and mix through. The maker also recommends it on komatsuna, green beans, carrot, shungiku and mushrooms.
