About Daisho
Daisho Co., Ltd. (株式会社ダイショー) is a Japanese seasoning maker established in December 1966 in Fukuoka — originally as Daisho Foods, set up to make grilled-meat seasoning, and its very first product was a yakiniku sauce called Yakiniku Ichiban. It now works from dual headquarters in Tokyo and Fukuoka, and is known across Japan for yakiniku and steak sauces, seasoned salt-and-pepper, and nabe hot-pot soup bases, under the company motto "creating happiness through deliciousness".
What is shio kosho?
Shio kosho (塩こしょう) simply means "salt and pepper", but in Japan it is sold as a single pre-blended seasoning rather than as two separate grinders. It is the default all-purpose seasoning in a Japanese kitchen — the thing reached for to season meat and fish before cooking, and to season a stir-fry or a bowl of fried rice as it finishes.
How to use & enjoy
Daisho's own guidance is to use it two ways: for shitaji — seasoning ingredients before they are cooked — and as a finishing seasoning once the dish is done. The maker names the everyday jobs it is meant for: seasoning stir-fried vegetables and fried rice, and pre-seasoning steak and hamburg steak.
