About Bull-Dog Sauce
Bull-Dog Sauce Co., Ltd. began in 1902 as the food wholesaler Misawa-ya Shoten (三澤屋商店), started making sauce in 1905, and was formally incorporated in 1926; it is headquartered in Nihonbashi Kabutocho, Tokyo. Alongside its classic Worcestershire, chunou and tonkatsu sauces, the company makes the Uma Sauce, Premium dressing and Tsukishima monjayaki ranges.
What is Japanese Worcestershire sauce?
Japan's brown-sauce family runs in three grades separated by thickness: ウスター (Worcestershire) is the thinnest and pours freely, 中濃 (chunou) sits in the middle, and とんかつ (tonkatsu) is the thickest. All three are built on a base of vegetables and fruit rather than being seasonings used by the drop, and Japanese kitchens keep whichever grade suits how they eat — the thin one for pouring and cooking, the thick ones for coating.
How to use & enjoy
Bull-Dog's own suggestion is to pour it over fried food for a lighter, cleaner finish. More broadly, Worcestershire sauce is a savoury table condiment splashed onto grilled and pan-fried meats, and a background seasoning in stews and gravies; it is also the classic savoury note in a Bloody Mary. In Japanese home cooking it turns up in Napolitan, the ketchup-based spaghetti, and in the pan sauce for hambagu, Japanese-style hamburger steak.
