Bull-Dog builds it on seafood umami and a sweetness the maker describes as one you don't tire of, aiming squarely at the taste of Osaka, takoyaki's home city. Tomato, dates, apple and onion give it a dark fruity body, while bonito extract, oyster extract, kelp powder and a little chicken extract carry the savoury depth. Bull-Dog Sauce Co., Ltd. began in 1902 as the food wholesaler Misawa-ya Shoten (三澤屋商店), started making sauce in 1905, and was formally incorporated in 1926; it is headquartered in Nihonbashi Kabutocho, Tokyo. Alongside its classic Worcestershire, chunou and tonkatsu sauces, the company makes the Uma Sauce, Premium dressing and Tsukishima monjayaki ranges.
What is takoyaki sauce?
Takoyaki (たこ焼き) is Osaka's street-food classic — small round batter dumplings with a piece of octopus inside, cooked in a dimpled iron pan. Takoyaki sauce is the dedicated finishing sauce spread over them once they come off the pan: a thick, dark, sweet-savoury sauce in the Worcestershire family, closer to okonomiyaki sauce than to a thin table sauce.
