Bull-Dog Sauce Co., Ltd. began in 1902 as the food wholesaler Misawa-ya Shoten (三澤屋商店), started making sauce in 1905, and was formally incorporated in 1926; it is headquartered in Nihonbashi Kabutocho, Tokyo. What is okonomiyaki sauce?
Okonomiyaki (お好み焼き) is Japan's savoury cabbage pancake, and okonomiyaki sauce is the dedicated seasoning it is finished with — a thick, sweet-savoury brown sauce in the Worcestershire family, sweeter and more syrupy than a table sauce so it sits on the pancake rather than soaking in.
How to use & enjoy
Okonomiyaki sauce is the finishing sauce for okonomiyaki, brushed or drizzled over the pancake once it is cooked. It is traditionally applied together with Japanese mayonnaise, bonito flakes (katsuobushi) and aonori (dried green seaweed), the classic combination that tops the dish. The same sauce also finishes Hiroshima-style okonomiyaki, the version built with a layer of fried noodles between the batter and the toppings.
