Azuma Yuki Sodachi Organic Natto 3-Pack 120g is organic fermented soybeans from Azuma's Yuki Sodachi (有機そだち) line. The organic certification runs the whole way from growing the soybeans to manufacturing the finished natto — not the bean alone — and the tare sauce that comes with it is made with organic soy sauce. About Azuma Foods
Azuma Foods (あづま食品) has made natto in Utsunomiya, Tochigi since 1950. In 1982 it became the first in its industry to partner with an organic farm in Minnesota, USA, and began producing organic natto — a line it has sold and refined for more than forty years since.
What is natto?
Natto (納豆) is soybeans fermented with Bacillus subtilis natto culture. The ferment gives the beans a sticky, stringy texture and a deep savoury aroma, and it is a daily breakfast staple across much of Japan. The culture is alive, which is why natto is sold chilled and must stay that way.
How to use & enjoy
Natto is stirred well after opening — the stirring works air through it — then mixed with the tare sauce and karashi mustard that come with it, and spooned over hot steamed rice. In Japan it is typically eaten at breakfast. Chopped spring onion is the standard garnish.

Natto: Organic whole soybeans (grown in the USA, managed to prevent GMO contamination), natto culture.
Tare sauce: Reduced starch syrup, organic soy sauce (contains wheat, soy), sugar, salt, glucose, mirin, yeast extract, bonito extract, brewed vinegar, Western-style dashi.
Karashi mustard: Mustard, brewed vinegar, starch syrup, salt, chilli pepper.
