About Azuma Foods
Azuma Foods (あづま食品) has made natto in Utsunomiya, Tochigi since 1950, and its packs carry the line natto hitosuji — "natto, and nothing else". The company describes its approach as a meticulous method for drawing out the soybean's flavour.
What is natto?
Natto (納豆) is soybeans fermented with Bacillus subtilis natto culture. The ferment gives the beans a sticky, stringy texture and a deep savoury aroma that is a daily breakfast staple across much of Japan. The culture is alive, which is why natto is sold chilled and must stay that way.
How to use & enjoy
Natto is stirred well after opening — the stirring works air through it — then mixed with the tare sauce and karashi mustard that come with it, and spooned over hot steamed rice. In Japan it is typically eaten at breakfast. Chopped spring onion is the standard garnish.

Natto: Whole soybeans (grown in the USA, managed to prevent GMO contamination), natto culture.
Tare sauce: Hydrolysed protein (contains soy), fructose-glucose syrup, soy sauce (contains wheat, soy), salt, sugar, brewed vinegar, bonito extract, kelp extract (contains wheat, soy) / alcohol, seasoning (amino acids etc.), vitamin B1.
Karashi mustard: Mustard, salt, brewed vinegar, starch syrup / acidity regulator, colour (turmeric), thickener (polysaccharide), flavouring, vitamin C.
