Asamurasaki Kaki Shoyu (Oyster Soy Sauce) 150ml is a concentrated seasoning sauce built on umami extracted from fresh Hiroshima oysters, blended into naturally brewed (honjozo) soy sauce and rounded out with bonito and kelp dashi, mirin and sugar. About Asamurasaki
Asamurasaki was founded on 26 November 1910 in Fukuyama, Hiroshima, as the soy-sauce maker Fujii Kunigoro Honten, and now works from Kasaoka in Okayama. Kaki shoyu is the company's signature product line.
What is kaki shoyu?
Kaki shoyu (かき醤油) is soy sauce infused with oyster extract — a Hiroshima speciality, and a different thing from Chinese-style oyster sauce, which is a thick, dark, sweetened paste. Kaki shoyu pours like soy sauce and is used like one, but carries a deeper, rounder savouriness from the shellfish and dashi worked into it.
How to use & enjoy
Asamurasaki gives three dilutions on the bottle: about 10–12 times water for udon, soba and chawanmushi; about 12–15 times for oden, hot pot and clear soups; and undiluted, in the same quantity you would use soy sauce, for simmered fish and vegetables. The maker suggests first-time users try it poured over tamago-kake-gohan (egg on hot rice). More broadly, a concentrated tsuyu of this kind is what noodle broth is made from, and is also used to season hot pot.
