Asada Co., Ltd. (株式会社アサダ) is a Nagoya pickle and prepared-foods maker. The business began in October 1931 and was incorporated in 1948, taking its present name in 1987; it produces from its Chita factory in Tokai City, Aichi, and supplies well over a thousand lines, many of them made for other companies' brands.
What umeboshi is
Umeboshi are Japanese plums — botanically closer to apricots — packed in salt and then dried in the sun. The result is not sweet: it is a preserved sour-salt seasoning, eaten in very small amounts rather than as fruit. It is one of the oldest preserved foods in the Japanese kitchen.
How to use & enjoy
The classic use is as a filling for onigiri, the Japanese rice ball. A single umeboshi set on plain steamed rice is the traditional hinomaru bento, named for its resemblance to the Japanese flag.
